Tried this yesterday and it came out fantastic. Cut some potatoes in half and covered the bottom of the crockpot with them. Put salt, pepper and Zatarans Garlic and Herb seasoning on them with some butter. Was going to put a whole chicken on top but grocery store was out so bought some skinless chicken breasts for my wife and a couple of half chickens. Put salt and instead of Lemon Pepper which I normally use I put on some Orange Pepper that I found. Put it on high for about 5 hours and came out like an awesome Rotisserie chicken and the potatoes cooked in all of that juice were great. Had it with a salad with Jalepeno Ranch dressing. Can't wait for the leftovers tonight.

the crock pot is a wonderful invention. this recipe sounds good, will have to try it.

Did this again New Years Eve for all of the family in town and it turned out really good again. This time used a whole chicken. I left the potatoes a little bit bigger this time and they came out really good. I am now going to experiment with some other things to put under the chicken with the potatoes to see how they come out. Maybe try some mushrooms, rice, peppers, etc. Cooked it on high for about 2 to 3 hours and then let it set on Low for a couple of hours until we were ready to eat.

Use carrots under the chicken. Potatoes around, onions on top. Celery adds flavor. And brine the chicken.

Chop up some peppers and onions and mix in with the rice, use stock or water with Herb Ox salt free bouillon powder for the liquid to cook the rice. I like to chop potatoes fine and mix in the rice when cooking. Put chicken on top.
