spatchcock, inject with tony chacheres creole butter liberally, rub with olive oil, sprinkle liberally with tony's bold creole seasoning, smoke at 325-375 until deepest part of thigh and breast temps out safely. generally about 1 1/2 to 2 hours on my ceramic grill. follow this recipe and i promise you will thank me later. i hate turkey but this stuff is good. my momma even said shed never cook a turkey again!!

Been doing it for 10 years as we give all our employees a turkey every year and ask them if they want me to smoke it . The night before I clean them and put my home made rub on them . Cover them in foil and leave them in a big ice chest and cover them with ice . Get the smoker to around 325 and smoke them till the outside color is just right . I use mesquite . Then wrap them back up in foil and keep them at 325 till the inside temp is right . SOO good and juicy .

I've smoked LOTS of Turkeys in my time. I may or may not inject the bird before smoking it. I've never brined one in my life. Might start doing it though. Never to old to learn.

I need exact amounts for the brine. How much salt, sugar or whatever?

I do 1 cup water and 1 cup sugar per gallon of water. Add seasoning if you wanna.

Agree! Done a lot of turkeys over the years that I only thought were good. We discovered brining and spatchcocking a couple years ago and absolutely the best! You will have people begging to make 2!


I have to give Chickenman credit for spatchcock turkey since he's been doing it since 1996 so he basically invented it and without him it wouldn't exist. I give you more cred for posting it in the recipe forum and reminding me about it. This will be my first turkey spatchcocked. Been doing chickens for a while and that is the way to go. Looking forward to the turkey results. If it wasn't for you JWfish and maybe Chickenman a little my turkey will have sucked this year.

I thought your probation terms said no more spatchcocking fowl.

Thanks. Turkey is in a bucket soaking in the beer fridge. Gonna smoke it on the egg in the morning.
