It was something like a week's worth of cooking for a skillet of refried beans.


The freezer in my beer fridge is full of scraps that I have saved for just such occasions. Leafy ends of celery, pepper stems, leftover bits of onion or carrots that don't get used all are saved for broths. Shrimp peels and lobster or crab shells are saved for gumbo or bisque. Ham bones for beans and soup.

I also keep jars of bacon grease from when my grease trap gets full. Refrigerated bacon grease works great as a sub for crisco if you want to make biscuits or anything where you are cutting into flour.

I re-heat my pizza in the oven at 350 for 10 minutes.

Also baked potatoes, I chop up and fry on the skillet.

Corn bread, sliced in half, dotted with butter and toasted under the broiler. Slice squares of cold Mac and cheese, roll in seasoned panko crumbs and deep fry.
