Soak them in a mix of beer and Italian salad dressing. After soaking, coat with cayenne pepper and regular black pepper. Then throw on grill and cook until its yummy.

Haven't been there in a while but La Familia in FW had the best I've had around here.

I buy a couple skirt steaks the day before and dust them with either Fiesta fajita seasoning from H.E.B. or Everglades heat. Grill whole over mesquite coals, usually about three minutes a side, and slice on a bias cut across the grain starting at the bottom right "corner" of the steaks. I do the veggies either in a fish basket on the grill, or on the stove in butter. Fresh tortillas from Jesse's Tortilla Factory.

Lupe for sure. Marinate in citrus for 8 hours and grill, it's pretty close. I think it gets more complicated but just try your own.
