if you want to see the real difference go to central market. The grass fed beef looks so much better is it worth the price I'm not sure as I've had both and both are dang good when the quality of beef is that of CM. The butcher there can tell you more than you will ever think you needed to know about the difference. CM butchers are that real butchers not just a guy at kroger packaging up meat out of the case for you.
If you really want a great steak then forget both of those and get the guy at CM to cut you one of their 28 day dry aged steaks in whatever cut you prefer from Ribeye to strip to porterhouse. Just a bit more than the natural grass and in line with prime it is like putting butter flavored beef in your mouth they are so good and tender. They are about a twice a year treat in my house.

Grass fed does not always mean naturally growing grass from the meadow. Hay is also considered a grass, and what you buy in the store has typically been fed this way. They can get some good marbling from hay. If you go to a butcher and get grass fed beef that was fed its entire life in the pasture, then the meat will be fairly lean and actually have a bit of a gamey flavor to it. The kicker for this is that a cow eats a lot of grass, so depending on where your land is and how much rain you get, you can only support so many cows without supplementing feed.
Cattle feed is not the same type of corn you buy as roasting ears. It is usually called maize - basically the same plant, but the roasting ears have been cultivated to produce the large kernels. Maize used for cattle feed is harvested by a combine that chops up the entire plant, stalk, leaves and cob. The pieces are stacked in huge rows on the ground and covered by big tarps. The tarps keep moisture and heat in and let it ferment. Cows love this fermented corn feed. The sugar and protein really help them pack on the weight and make for great marbling.

I prefer mine to be put on lush, green oats after pasture grazing. Then finished on grain. K.P., are you saying your genetically superior cattle will do better on plain old grass and hay than they would on grass, oats, then grain?

I am going to eat chicken or fish in place of grass fed beef, when I eat beef I want the best, grain fed and aged with plenty of marble. I guess I could do burgers, roast, fajitas with grass fed beef, but a steak, nada. I agree with this, I have had some that's ok but I think you are better off buying a higher grade than grass fed.

I like grass fed beef but MUCH prefer the taste of grain fed - probably the added fat content?

On a episode of Billion Dollar Buyer. Some farm wanted to make a deal with Tilman to put grass feed beef on his menu. So he did a test run in one of his restaurants. Everybody thought it sucked.

I just got a half beef from TXfour, now that some good beef Thanks Bruce! Glad you guys like it. Delivered 1900 pounds last week. Can't keep enough animals in the lot.

Have no idea how they will do on grain because we don’t feed or finish with grain. We take the best breeds that convert grass to pounds and have the marbeling characteristics we want and we let them get fat. I consider our herd genetically superior to what most eat because we work hard to get the best genetics we can and most beef cattle that get sold in stores are whatever the sale barn has for sale that day. We have Registered Angus, Registered Devon and Registered Wagu genetics. It works well for us. Hope that answered the question you had. God bless, KP
