Finally found a decent supplier of beef ribs. Hopefully this supply doesn't dry up like the last few we've tried, and we can keep selling them on Saturday's.

They definitely have some meat on them & You use plenty of rub when you smoke them.

The big rib is a beef rib. The rack of ribs is St Louis cut pork spareribs.

The one on the scale would be about $24

Ask for plate ribs at the butcher. Current price for 4 bones is 30 to 40 bucks. I actually get them occasionally from Albertsons and they're pretty good.

T-man those ribs look spot on, what kind of rub are you using? I've been using sriracha with just salt and pepper.
