Yes I put just a couple wet hickory chunks around the edges. The lump is already a mixture of oak and hickory so no need to add a bunch.

No. I bring up to desired temp to smoke. Eggs have a hard time cooling off any ceramic for that matter. Once I hit 250 is thats my target i choke her to ride there.

Very consistent and then toss in a few damp pieces of wood.
