What size line does everyone throw jigs and plastics on? Am I overkilling it with 20?

I use Seaguar 20lb on everything but a couple of reels. I think it's a good choice for jigs.

I use Sunline Sniper or Shooter 20 in most deep water situations, other than drop shot or cranking.

I try to go as light as I can get away with. Factors determining that is the weight of jigs, tx-rigs, or C-rigs, the depth I'm fishing, water clarity, and the cover I'm fishing.

I use 15#-20# depending on water temps, cover, and the weight of the bait.

No, I'd say 18 or 20 is pretty standard for jig fishing

Finesse jigs 14-16 lbs sunline shooter. Flippin jigs 25 lbs invisx, havent noticed lack of bites and you really like it when youre pulling a 5 pounder out of a tree/dock. Dot throw football jigs really so dont have a say on those. Plastics such as Texas rigs I throw 20 unless I know I got a limit and Im hunting big fish then 25.
