LOL I deboned some thighs, pounded them out thin, season with my buddies citrous bbq rub, sous vide with a little of my shallot garlic oil. Cooked at 166 for 45 min. Took them out and put the bags in an ice bath to cool. Dried them, dredged in flour, egg panko. Lightly fried to crisp it up. AMAZING.

Is that chicken as raw on the inside as those steaks you guys eat.
If so, its KFC for me.

Why do ou cool it? How long do you then have to fry it to get it back up to a safe temp? What am I missing?

It actually looks very tasty but ain't nobody gonna boil my meat. The meat is in a sealed bag, so water doesn't touch it. It was in 166 water...has to be 212 or better to boil.

Why do ou cool it? How long do you then have to fry it to get it back up to a safe temp? What am I missing? You cool it to stop the cooking process. The frying is basically to cook the breading, and re-heat the meat.
