Always good advice to document valuables. I have photos of my kayaks, trailer, plus serial numbers. And last year I put a lock on my shed where the kayaks reside.

Note, serial numbers/HIN numbers can be easily removed. I strongly recommend that you put your driver's license number or serial number in several hidden locations on your kayak. You are liable to be very disappointed if you think that you will be able to prove a kayak is yours based on points of identification such as scratches or stickers. It only takes a minute to write your DL # with a sharpie in a hidden location. Most police departments have engravers that you can borrow to etch your information.

You can find an engraver on sale from Harbor Freight for around $5, probably less than the gas to return one to the police.

Crazy you got not one, but TWO stolen kayaks returned. What is the story... how did you find them to begin with?
Good information above.

Many kayaks are stolen on fishing trips, out of town. Keep the hull numbers of your kayaks - as well as those of the firearms and other valuable items you carry in your vehicle or boat, in your phone so you can get them entered into the stolen database immediately if they are stolen. And FWBanger's advice is solid.
