Any suggestions on a dry wall anchor best suited for hanging my deer head. I'll be hanging it above my stairs so there is the possibility of heavy vibrations from walking up and down the stairs. I would probably shed more than a tear or two if it fell off

I would try to find the stud and put a real nail in there, but that's just me.

Just get the biggest Molly/Toggle bolt you can find. One with "wings" that are about 4" across when opened. That should hold it okay.

Tear the sheetrock off and but a cross brace in. Then replace sheetrock. Problem solved. Seriously, go to a regular ole hardware store like Ace or True Value and ask there.

I would put that gently on a scale so you'll have a good idea on the weight.

And yes, that's a nice buck.

Use a ceiling fan brace
You will have to cut a hole to install but the mount will cover it and the brace will attach to the studs very secure

Make yourself a small frame out of 1x2. That way you can have at least one part of it in the stud. If not that, look at the gorilla hooks. The way they are shaped I trust them more than other drywall mounts.

Screw in anchor I use these if a stud is not available
