My green tomatoes are really producing. I would like to can some just like the sweet pickled tomato relish wedges you can get in most catfish restaurants. I've seen a few recipes online, but they just don't seem like what I am looking for. If anyone has a recipe they are willing to share, I'd greatly appreciate it.

It isn't Chow Chow that I'm thinking about. It is more like a pickled tomato wedge, it's kind of sweet.

The sweet pickled green tomatoes are in there under the chow chow recipe. Scroll down. Read India relish. How you would change it is change the tomatoes from standard reds to green, omit the celery and add a tablespoon celery seed. Those onions are magnificent in tuna and chicken salad. You want your onions. Don't skimp on the onions.

In Cuba, they slice them, add a little vinegar and oil,lightly pepper and eat them green. They are actually quite good
