I hate changing jig colors when I'm not catching fish. I feel like I'm wasting time switching jig colors when I should be covering more ground trying to find the fish. I have one or two jig colors I'm confident with. I'm almost to the point where if I can't catch fish with those colors, I should move to a new area instead of fishing the same area with a new jig color.
Thoughts?

Yes I agree with that when you're fishing from a boat. However, carrying multiple rods when fishing from the bank stinks!

Color doesn't matter until it does. I fish exclusively with BRIGHT PINK jig heads 99% of the time. Crappie seem to "Love Them or Hate Them" but they do work well for me. The other 1% I use Chartreuse. But in all honesty back to my first sentence... Color doesn't matter until it does. Good Luck and Tight Lines!

Color doesn't matter for the most part. Find you a few colors you like and build confidence in them. Confidence in a color working is more important than the color itself. If a fish is active and going to bite, it will bite any color. Size, weight and shape of your jig plays a bigger role in triggering fish in my opinion.

I have a hard time tying the jig knot while on a boat. Between the wind, waves, watching out for teenagers on jetskis I find it very tedious and time consuming. here's what I do that I think will work for you:
1. Tie you jig on some fluorocarbon line about 18 inch long 2. Terminate it with a barrel swivel 3. Put this in a sandwich bag 4. Tie a small swivel to your mono and you can quickly change jigs. Also nice when you hang up and break off, as the fluorcarbon line will be what gives.

Done a fair amount of reading and research regarding if fish can in fact see colors. Depends what you read, some research suggest that some species of fish, not all, should be able to see color based on the the design of their eye's, they have both rod cells and cones cells. Have never been able to find any research that confirms or denies that crappie in fact can see color. That said, I just like the rest of you folks, I've got every color known to man in my tackle boxes.....
I think it was Bill Dance that said "Lures are for the fisherman, and not the fish"

Get out your Color-C-Lecter and see what's "hot". Anyone remember those?

I used to say it doesn't matter, but I have noticed it can matter quite a bit. I've had lots and lots of days, especially in clear water where fish are going crazy on white and then you throw black, or white and chartreuse and the bite goes dead. I've seen them bite purple and chartreuse and not touch another color in the same brand of jig. While I will admit I've caught them on plenty of strange colors, I think it does in fact matter, especially when considering matching the color to the baitfish in that area or to the water color. If a fish like a can see fishing line in clear water, and that stops them from biting, I think they can definitely see color in a jig.

Side note: I still think what's most mportant is using the lightest line you can get away with. Pair perfect color with the right line and you're in good shape.

This seems to be always left out when discussing color! How much light actually permeates the water to the depth you are fishing? Different depths different amounts? What color is the bait they are eating? What color is the water you are fishing in? I suggest its not just about the color of the jig head & soft plastic it a lot more.
