what to soak big cat in before you cook?

I caught a 25 lb yellow at my local marina. It has been years since I cooked one that big.
Do you guys soak it in buttermilk - salt water - 7 up - or what before you fry it up. Have cooked several hundreds of fish over the years - just not big yellows.

Just about anything will work. The most important is to remove every bit of fat and odd colored meat or it will be nasty regardless of what you do to it. Yellows aren't the best eaters but they can be made to work.

Dry it, then soak it in butter milk.

The best eating there is, What i do is clean em and put in a bowl of water and pour some a lil bit of vinegar in with it and let it sit over night in the fridge, If there is any fat it will show up next morning being a lil yellowish color, wash and dry and eat, nothing any better,

I don't eat Blues that are much over 10 or 15 lbs because they are just a little coarser than the smaller sized cats plus they are fun to catch so I want to do CPR (catch, photograph, release) for them. I'm sorry but if I catch a big Yellow cat/Oppalusa/Opp/willow cat/flathead catfish I'm eating it!! They are the best eating in fresh water to me and size doesn't seem to make their meat coarse. Their belly and head meat are just great! I've eaten them to 50 lbs and other than hanging, cutting their tail off and let them bleed out before I clean them I don't do anything special on them.
You know that old saying "Some people march to the beat of a different drummer."? I don't listen to a drum at all and have meandered through life instead of marching.

If you do this, they are right up there with crappie for eating. Both are the best fresh water fish to eat!

Anybody catch one of those flatheads, no not eat it or throw it back. Bring it to me for proper disposal. I know how to get rid of it without harming the environment.

Like above remove any red or fat then soak in ice water. Change the water several times. I'm not a fan of brining fish.
