ive been told its great eating by Cajuns who usually smoke it or fry it up. Meat is supposed to be really good

Gar Balls from gator gar are some fine table fare. I had just as soon have them as stuffed crab. Never et one the long nose gar but have caught them to 30 lb. A 4 to 5ft gator gar has a lot of meat on it.

Needlenose gar...yuk. Gator gar, however, are delicious.
I had some in a tiny diner in a tiny town in LA. She cut the meat real thin, like thin pork chops, marinated them in hot sauce overnight, and then coated in corn flour and fried. I was stunned at how good it was. Gonna keep the next gator gar I keep and try it out.
