Any ideas/suggestions for this? Me and a buddy are fishing Conroe this weekend from a rental 15.5' canoe. Will not have a depth finder or anything, and haven't fished there in a loooong time. With that in mind, how should we attack it? We're both more interested in bigger fish than numbers.

Go north. The wind will ruin your day down south. Either launch at Stow Away off of Calvert road and fish in Paula or Launch at the 1375 bridge. Also you may want to consider fishing Lake Raven at the Huntsville State Park.

Typical Conroe advice. Poor guy just wants to fish and no one will even tell him where its best for a canoe, let alone any tips on color or technique. 40 minutes from my house and I dont fish it.
I used to launch up at Scotts Ridge, that area you could easily fish in a canoe IMO. Small fee to USFS to park there from what I recall, and dont even leave a quarter on your seat when you leave your truck! Thieves!

Definitely up north, I recommend a Cagle or Stow Away, but Cagle would be less crowded most likely. I've never had any issues at Cagle and we camp there occasionally.

Thanks for the advice y'all! Probably will follow you guys' suggestions and end up at Cagle. Would jigs be any good around that area? My plan was to only take jigs in an attempt to MAKE myself learn to fish them, but I don't wanna set myself up for failure...

Jigs work too but lately I've just had better luck on soft plastics.
Launching out of Cagle I would fish the bank north and south of the launch and if you feel like padding across to the islands then that may be good too.
With the water higher I would flip and pitch all of the newly submerged brush along the banks and coves.

I'd only add that a canoe will blow across water even on the slightest of windy days.
Since you are renting, and there are two of you, what I'd do is go grab some anchor line and perhaps pick up two of the little inexpensive 2.5 lbs. plastic coated dumbbells. Both the rope and the dumbbells are available at places like Academy/Gander and more.
So, nothing fancy here. Find your location, divide the rope and have the stern rider drop it over and let out some line, then have the rider at the bow end do the same to keep the canoe from arcing back and forth too much.
Try to get line up with current and wind . . . you don't want to get sideways to it and get tipped over somehow by having an anchor getting lodged.
Two knives for quick release in a pinch. Just hand reel in the make-shift anchors.
One alternative to arrest wave actions? If you find a mat of vegetation, just pull up on top of it and fish the edge.
IF not this . . . even with a 5 MPH wind, you'll be drift fishing all day long . . . nothing wrong with that.
