Caught my limit again today. Got a few cleaning questions

No pics today unless you want one of the fillets getting a salt bath.. I use a electric knife and I'm leaving maybe a 16th inch of meat on the bone, maybe a little less, but no more than. Is this normal or do I need a better knife? I can get all the meat off the skin. And do you give your fillets a salt water bath for a day or so in the fridge before going to the freezer? I personaly think it helps with fishy taste, "mostly for catfish" and it helps alot for the fillets to finish bleeding out

I think your ok with that knife and I don't put them in a salt bath,but I do recommend the the hot oil bath.

That left on meat is typical with an electric knife. The two blades are too thick to cut close. That's one of the reasons I went back to a good manual fillet knife. Besides the electric knife being too slow.

I hate cleaning a limit with electric, I don't think I'd wanna mess with 10 with a manual

I cut threw rib bones and all, flip the filet over and remove from skin, then cut the rib cage out. On small fish, I rarely worry about that belly meat, but on larger fish I cut the ribs out around it. I always stick my fish on ice before fileting so the meat is firm. I feel I get a cleaner cut. I soak them in water overnight in the fridge, no salt.

I start out like usual on filleting but I cut mine all the way off at the tail. I abgle my knife back under the ribs and slide the meat off to the side. Its much faster this way because theres no ribs to cut out. Clear as mud? Lol

The Shark Blades work great. The blades are sharp and flex some. Thin enough too.

I'm not the bone picking type of guy, I like my stuff boneless, and I'm not a patient eater. I eat really fast so I don't have time to be slow chewing for bones, lol
