For texas inshore fish. (Poc to rock port to be exact). What would it be? Color, size, brand, year round results. If you name a soft plastic, how would it be rigged?
Mine is a 6(ish) inch white fluke made by zoom. Solid white and texas rigged.

i love topwater...yo zuri 3db clear...made for salt, but is the best top lure in fresh i have ever seen! the rattles sound exactly like a bait fish flying into the air to escape...loaned one to a buddy on the lake, and he caught 8 in a row, lol... easily doubled the number of strikes i would get with other top lures...

Thank goodness I've got choices, but if it was just one for every day gotta get bit... Hogie super minnow, pumpkin/Chartreuse on a 1/8 oz Oldham screwlock head.
But, since we don't, it does make for a decent argument.

1 bait, for all conditions, every season? Gold spoon, no brainer.
That being said, my favorite bait at this particular time of the year is a corky and as the OP said, magnum fluke, cept I rig mine weightless and weedless, with a 5/0 VSK, long shank, off set, heavy duty worm hook (weights the bait perfect), white color, loaded with red pro cure gel shrimp flavor. Once that gel starts melting along the body of the fluke it becomes BIBLICAL! Well maybe magical, all I know is the fish in the Laguna likes it.

Probaly one of the paddle tail softplastics in pumpkinseed or olive color. I just like tops too much and enjoy fishing a lot of different lures to maximize my effectiveness.
One knock she dog skitter jr spook jr.
rat tail Little John paddle tail ChickenBoy
Fat Boy
All very good in the right time and place

When you state one bait then that means everywhere you might stop and sling something out. Shallow or deep muddy or clear grass or sand. Makes your choices pretty thin.
I don't have a lot of different choices but way more than my neighbor who uses norton bull minnow in plum/chartreuse only. That's it and he can't think of any reason to make it any more complicated.
