They are not interchangeable. Two totally different flavors profiles abd can make food taste way different since they are not alike. I agree. They are not interchangeable. The point is jalapeños are on their way down to #2 on the pepper rankings. Green chiles are superior. It's only a matter of time before the rest of this country gets on board with this. Inevitable, really. I don't see how you can rank chiles Best chile for a burger is not the best chile for mac and cheese and is not the best chile for a pot of Texas red Ridiculous post.

Here's what drives me crazy.
We all love hatch peppers. But there isn't such a thing. It's green peppers. And when they turn red and are dried they're then called California or Anaheim peppers.
And I've got a half pound of those things in the pantry right now. Actually the NM green chilies are their own species. There is a Hatch valley as well as Hatch,NM. If you think an Anaheim tastes anything g like a green chile you are buying the wrong green chiles. NM grown chiles are in a class of their own. are you sure? "Hatch chiles" are various varieties of "New Mexico chiles" which are cultivars of capsicum annum (capsicum - genus; annum - species) grown in and around the Hatch Valley Anaheims are also a cultivar of the annum species, as are poblanos, anchos, serranos, and every other domesticated chile pepper of that general shape in North America

It's funny to see green chile as an hipster food. Been eating them for 40hrs long before they we hip. They are their own food group here in NM. I didn't grow up in New Mexico. But, I have been traveling there for the last 5 years for work. I have gotten to where I really like the green chiles in the food. It started out where I would eat it there. Then, I started looking for it on stuff here. Now, I have officially changed my ranking. Jalapeños are great. They are my number two now. If that makes me a hipster, then give me the skinny britches.

This is Texas - there is no such thing as a "green chile" ... that is a california thing for people that can't identify peppers properly (say that 5 times fast) ... - jalapenos forever - and for some others posting, there is no jalapeno tree - they are yearly...

There is a jalapeño tree, bring them in and they keep on going. Got one I just picked a pepper off. A friend has had one for several years.
I renamed it capsicum perennial

If there are no Green Chile add-ons I will get jalapenos. For instance Subway not in NM, Jalapenos. I use to live in Deming and ate green chile for the first time at the local Mexican eatery, put the hurt on me pretty bad, but I became addicted to the flavor before my taste buds were burnt off. I like them both but prefer Green Chile.

I tried Hatch this year for the first time and was well pleased with the flavor . Added bonus was that they didn't give me gas . I can eat all the hot chiles with no probs but sweet peppers (especially green bells) tear me a new one .
