If you fry fish for several folks at one time, go to Bass Pro Shop or Academy, they have pans (with handle) that holds one gallon of oil and a basket (with handle) that fits inside. Use outside, kinda makes a mess when you cook several #'s of fish. I have a double burner, one for fish and one for frys.

Double burner cooker is nice, speeds things up quite a bit.

Also get a cast iron griddle and some blackening mix.

you can't beat the V bottom cookers but I'm not there yet I have two wash pots for the big fish fries and a dutch oven I like the way the cast iron holds heat. Also get you a fine mesh strainer to round up your meal that comes off the fish so it will not burn on you and make for some off tasting fish.
