I am thinking about upgrading but still have to stay under budget. What are some recommendations? My priority list would be stability, elevated seat, easily customizable, and less than 1000.00. I fish smaller creeks and a few lakes. Mostly for crappie. Thanks for any responses. Check out the Jackson Kilroy. I know it's almost $1500, but .... Reading isn't your strong suit is it? I suggest the $999 Jackson Tripper 12, which is almost the same boat as the Jackson Kilroy that costs almost $500 more.

What's makes you say the Sea Ghost would feel the least stable? From personal experience I feel quite the opposite? Since I have not paddled this latest version (only the original), I guess I'll have to take your word for it. I'm basing my opinion on it's stability seeing it's hull is similar to the Native Watercraft Slayer and Jackson Cuda. Meaning traditional kayak hull design but a touch wider with a flattened bottom to create stability. Whereas the other three kayaks have more of a tri-hull design. I also feel kayaks with a more tri hull design (also including the Rides, Ultimates, and others) are a much better, more stable platform for the high/low seats that are becoming popular, because they can handle the higher center of gravity. Although without knowing the OP's current kayak model (quick search reveals it may be the Field & Stream Eagle Talon) it's hard to know how stable of a kayak he's looking for.

If you're looking strictly at dollar amount then for under $1,000 you can add these to the other list: FeelFree Lure 10 - $999 Field & Stream Shadow Caster 123 - $799 (maybe? maybe not an upgrade?) Jackson Cruise 10/12 - $899/$999 Jackson Tripper 12 - $999 Pelican Catch 120 - $799 (maybe? maybe not an upgrade?)
You would also more than likely have to make a paddle purchase as well, since a traditional length paddle (220-230cm) typically isn't long enough for kayaks with high/low seating capability.

I bought my outback used for 1200. Deals are out there, they just don't come around all the time.

Nuemie, I see. Yes it is very similar to a Cuda and has nearly identical dimensions to the Slayer. Its a very stable platform in my opinion. I feel it offers a great compromise of stability and speed. Its similarities to the Cuda is what first drew my attention to it. Paddled a Cuda for over 2 years. Always wanted a little more speed and stability, I found that in the Sea Ghost. I cruise between 4mph and 4.3mph. My 3rd Sea Ghost is being delivered today.

For the last several years I have been fishing out of a Field and Stream Eagle Talon. I picked it up at Dick's on sale for 399.00. In my experience there's not a better kayak in that price range. It has been a good boat for me. I am just looking for something with an elevated seat and something more stable. My buddy fishes a Jackson big rig and it's a very nice boat but for that price I'd be in a pro angler. That's what I really want but can't justify 3 grand.

Does it have to be new? You can pick up used Ride 135's and 115's for well under $1000, sometimes including a rudder.
