Had me some of them yellow channel cat fillets blackened and some dirty rice for supper last nite. Couldn't for the life of me taste anything that tasted yellow.

in addition to trimming the red meat...
keep a pair of game shears with you. Cut the gills before you throw em into the box. They'll bleed out - fish blood is the mail culprit in an overly fishy end product. This ^^ and after cleaning, put the fillets in a ziploc with salty water, let them soak for about 30 minutes in the frig.
