Seems like the consensus is not to use the Terrova foot pedal so my question is how hard is it to fish in wind?

Extremely easy. In my opinion, the terrova is better suited for the wind anyways. U need either current or wind to get the full potential of the anchor lock and if going down a bank or wherever u might be trolling, just point in the direction u want to go and push the continuous feature and hit the autopilot and you will go where it's pointed at whatever speed u want to go

Agreed. The Spot Lock feature seems to get a little confused when the wind is calm. It works best when there is a 10-15 mph wind.
