I custom made this easily and fully removable rack for transporting my yak with my Jeep. I have recently upgraded to a factory rack for convenience, not to say that this rack isn't convenient. Take a look and let me know if you are interest. Welded construction from stock steel. Welded tie down points. Trailer hitch assembly could be used on truck beds as well. $100 and its yours.

how much room is there in the back for an oversized tire? looks pretty tight on your stock tire. I run a 35x12.50

There's a fair amount of room between the angle up to the crossbar and the top of my spare. I also have quite a bit of lead into the hitch that will allow an additional hole to be drilled for the cotter pin into the hitch. You are welcome to come by and take a closer look. Here's the tires I have on my jeep.
