I thought I would show the method for cleaning perch (and most fish) that I inherited from my Dad and Grandfather. It's quick and easy and you end up with a nice perch to fry. I use a Forschner rabbit knife for all my fish cleaning. That is a little different from the way I clean them for pan frying. Most of the time I fillet and skin them in one motion with my electric knife.
