Other than size what is the major difference between the 3 tunas? Is there a difference in the taste?

Never had bluefin. Yellowfin and blackfin to me taste pretty darn the same. Blackfin meat is a bit darker in color. Yellowfin get much larger so you can get a tuna steak like you are used to seeing when you go out to eat. Blackfin don't get that big. Big is usually considered to be over 20lbs or so. Not a big enough loin to get a nice sized steak. This ia my opinion. Others say yellowfin tastes worlds better, but not to me.

I agree with Joe. I really can't taste the difference after they are cooked or canned. But I have friends that won't touch Blackfin and swear it's terrible. I think they're on drugs ....

There's actually 6 species that swim around the US, & honestly, in the world market The yellowfin, blackfin & skipjack are the bottom of the list compared to the coldwater northern Bluefin, Bigeye or Albacore. I love it all, taste-wise. even atl/pac. bonito is good when properly bled. blackfins & yellowfin tend to stay in warmer water, Bigeye typically stay deep, Dogtooth (tropical) are apparently structure-oriented?
I have only the Atl. bluefin, bigeye, Pacific Yf, & Atl. longfin before I've caught them all.

I think they are really all the same unless you eat them raw. Bluefin melts in your mouth like a M&M. Yellowfin is good that is what most sushi places serve and Blackfin tried raw but rather have it cooked.

I eat blackfin raw if it is fresh caught, I really like it, but raw snapper to me taste better.

That's the pinnacle of tuna fishing, & I ain't ready for that yet. need a few more fish over 100#, before I try to tackle a 600+.
