Electric or regular knife? If electric, in my opinion, American Angler Ultra MT, without a doubt in the less than $50 range. Get some Mister Twister 9 inch blades and you are set, the blades that come with the American Angler are to thick and heavy for cleaning fish.

If you want a good filet knife that is not an electric one, Dexter-Russell makes a 9" filet knife that is the best out there that I know of. Cooked in several restaurants while at LSU and we always used them. The 9" is good and flexible and holds it's edge really well. Have used them on everything from sacalait up to 100 lb. tuna. You should be able to find them at Academy, Bass Pro, West Marine, or online. Paid around 25 bucks for mine with a plastic sheath. They also make a 9" serrated knife that is good for cutting just about anything short of a steel post. Have that one also for cutting bait, rope, etc.

I am certainly no expert on knives but I know what I like. I have tried different electric knives but always go back to my trusty Dover fillet knife. The whole fishing process is such a ritual to me since I don't get to go near as much as I want to. Just like thinking of different ways I would like to rig up for the next trip and re-working lines..I spend a good amount of time rubbing my fillet knife on a whet-stone keeping it sharp. Any other way would just not seem right.
I know I am still in the stone ages but the planning for each trip is just as much fun as the real trip.

Saltwater PIRANHA by Mister Twister.. Awesome electic knife. Blade stays sharp, course I haven't caught anything to use it on yet.... Kidding..

The Best electric Fillet knife you can buy is the Black and Decker Electric knife in the appliance section at Wal-Mart. They are only about $10 each and Wal_Mart will replace them if they go bad. They have a great straight edge blade and do a fine job on Catfish. If you need to replace the knife it is only a couple of bucks more than just the blades for any other electric knife

I have burned up a bunch of em and the best I have found hands down is GE. This knife comes with two sets of blades and the blades you use is the bread blades. These are more like a hacksaw and walk through bone like it was butter. dont give the chatter that other blades do. This knife usually is a little hard to find. I fish for a living so we have really put this knife to the test. Holds up very well.

Jackie is right on. American Angler with 9 in Mister Twister blades. Why do you only use the blades for a Mister Twister instead of the actual machine? I use Mister Twister to fillet fish (machine and blade). I have heard of people using the same combo you described for years. barndoor

Being retired and fishing a lot, I've tried all the electric knives. The winner for me is the Black and Decker. It seems to have more rpms than the mister twister which makes it cut large bones better. I also use the B & D to cut up my deer and hog meat. It is inexpensive as noted in previous post and it is a tough little knife. This opinion is based on more than 40 years of filleting fish with all kinds of knives.. But reality, it is just one old man's opinion.

I bought a repala electric or 12 volt. This has been a very functional knife. It was a little high but well worth it ( 39.99) This knife is found at Wal Mart and has a nice case for storrage.

I have had the GE knife for about 5 years now, and by far its the best knife i have ever owned. I have had a Mister Twister and burned it up, along with a couple of other brands, but those were the cheaper ones.
