I make crab cakes a lot and you can sub the crab for cooked flaked crappie and have a great dinner. If you need the exact recipe it's really easy.

Here is a good en:

Rub fillets with virgin olive oil. Sprinkle ceyanne pepper and salt. 2 to 3 fillets in foil and cover fillets with fresh picca de gallo. Squezze some lime on top. Wrap up in foil so the juices will stay in and cook about 20 minites in the oven on a cooking sheet or on the grill. If I cook on the grill I leave the foil open a little to get the smoke flavor. This is also real good using peeled shrimp.

I serve it up with some mexican rice and it is goooooood!

I really dont even like pecans, but this has become one of my favorite recipies.

1 quart oil for frying
3/4 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon ground black pepper
1 pound crappie fillets
2 eggs
3/4 cup crushed pretzels

Heat the oil in a deep fryer to 350 degrees F (175 degrees C).
Mix the flour, salt, and pepper in a large resealable plastic bag. Place crappie in the bag, and gently shake to coat. Place eggs and crushed pretzels in two separate shallow dishes. Dip coated crappie in the eggs, then in the crushed pretzels.
Fry coated fish 10 minutes in the preheated oil, turning once, until golden brown and easily flaked with a fork.

I have a crappie cake recipe on my web page. You can either pan fry or oven coom them. Also red sauce and tarter sauce plus others.

The BBQ Shrimp is really great!

Crappie Casserole

crappie fillets
bag of frozen broccoli
box of velveta cheese
box of rice a roni ( I use the chicken flavor )
cook rice and broccoli as stated on packages.
melt velveta in the microwave and mix in rice / broccoli
spray pam in a casserole dish,
spread some of the rice/broccoli/cheese to cover.
layer with fillets
spread some of the rice/broccoli/cheese to cover.
layer with fillets, repeat.

top with crushed wheaties / total / cornflakes / ruffles whatever...

season to taste

put in the oven on 400 or so for 15 to 20 minutes I guess depending on the size/thickness of fillets...

enjoy

I use Cavenders Greek Seasoning , sprinkle some on both sides of the fillets and cover for a while in the fridge, use either the grill with a cast iron plate or even the electric griddle (prefer grill) at about 375, 5 to 7 min on each side and serve them up with some fresh asparagras (sp) and rice. Also works great on shrimp on skewers
