The plastic used is less important than the "feel" on the line. The bite is subtitle and takes some practice to feel the bite. When in doubt set the hook. In California, the line is is smaller than in Texas. 8-10 lb line is typical. There is little standing timber in the water. Mostly rocks as the structures. When the line feels heavy, set the hook. I like the stand-out hook for the dropshot. It keeps the hook in the best orientation for a good hook set.
