This recipe makes two pies.

1 1/2 cup sugar
1/4 cup all purpose flour
1 teaspoon salt
20 oz can crushed pineapple - undrained
14.5 oz can pie cherries. NOT Cherry pie filling. Look for pitted red tart pie cherries in water.
Cook over medium heat until thick and bubbly. Remove from heat and add:

3 oz package strawberry gelatin
1 tablespoon dried orange zest
Allow to cool.
Thin slice 4 bananas and arrange an equal amount in two pie crusts. Pour the fruit mixture evenly over the bananas.

Fold together 8 oz whipped cream.
1 cup flaked coconut
1 cup chopped pecans
spread over the pies and refrigerate at least 3 hours before serving.
