 Homemade Pickled Sausage?

Anyone have a recipe for making homemade pickled sausage? What type/brand of sausage and what type of brine. Grew up in KS and had a place in town called Catfish Johns. It was a bar/pool hall/bait shop and they always had a big jar of pickled sausage on the counter for 25 cents each. Best ever. Used to be able to buy the Penrose pickled sausage in a gallon jar that were similar. Can't find those anywhere now either. Bought a jar of the Hannah's off of Amazon that were nasty and made with hot dogs. Let me know whatcha got. These go great with cold beer.

These sound really good. I love pickled sausage, but its hard to find the good stuff.
