Well guys I'm talking about frying some fresh speckled trout and fat crappie fillets. I don't want a salty batter I want a good quality batter that doesn't cover the taste of my golden fillets lol

Anyone soak their fish in a ice brine water solution for 10 to 15 minutes before cooking? Each piece must be washed well before rolling in batter of choice.

if you're trying to stay true to the flavor of the fish, 1) i wouldn't fry it... 2) use straight cornmeal if you do end up frying it...

I still say corn meal and salt fried at 375-390 consistent degrees. Has never failed me.

Simple recipe for a light crispy coating that doesn't overpower the flavor of fresh filets . Add seasoned salt, (I use Julio's) pepper, to 2 cups all purpose flour and 2 cups Zatarain's seasoned fish fry. Drop filets in milk, dust in the flour/cornmeal mixture and fry in hot oil at 375.

google "JR Mads Madgic fish breading.". you have to order it from indiana (or iowa, cant remember right now). i was a skeptic at first when my buddy told me about it. always liked louisiana or straight corn meal. tried it once and i am hooked.

Mix and Match till you find what's good for you , I use Louisianna Original and Spicy Shrimp Batter and Mix 50/50 and add Salt you can use a Milk ,egg Wash with Texas Pete / Tabasco for second coat if you like a Heavier Batter with a Kick . Not so Cornmeal Heavy it's a little lighter with the Flour Mix of the Shrimp Batter. No Matter what you Use It'll Be GREAT!!!! as Long as it's FRIED...... Baked Fish is for Sissies.LOL

Uncle bucks fish fry the hot and spicy kind is the best in my opinion, you can get it at bass pro shop

I like Uncle Buck's, and also Louisiana 'Tabasco' fry mix. Agree that simple cornmeal/salt/pepper is the purest way, along with some fresh lemons.
