Always wanted to keep a 30-40lb and let my friend the chef cook it up. Where I fished, either too tired to or too big a pain in butt to keep one. Have any pictures of gar on a plate? Friend said he would make Gar balls.

wish I did the meat is surprising how clean it is. That 20-50lb range are the best for eating.... but don't freeze it unless you plan on just making gar balls with um.

If you get a nice gar between 30-50 pounds, either throw the fillets over charcoal or on a smoker, thats a good eat.

I caught a 20 pounder and fried the fillets whole. Big mistake the meat tasted great but it was very tough to chew. Next time im making thin strips and frying those.
