What temp or characteristics are you shooting for when smoking a chuck roast?

Smoke them just like briskets Smoke open for 3-5 hrs. open depending on the poundage of meat, wrap allowing the juices to stay in the wrap, and smoke another 3-5 hours. You will be able to pick it apart with a fork. Temp is probably 250 degrees average.

I never use an internal thermometer so can't answer that. I buy boneless chucks (bigger the better) and stoke the fire every 45 minutes with 6 to 8 briquets and add a chunk of wood - usually mesquite or oak - and try to keep the temp between 250-300.

I never wrap and try to keep it @200.

I have had some fine brisket done in many many different ways.

Pull up brisket threads over the last 6 months and pick one......damn, otherwise do like everyone else that has got it done, trial and error. Start cooking them and figure out what you like the best...


Somebody posted about picking out a brisket that is the most floppiest on the skinny side. The floppier the better, this is true advice.
