After the 3rd time this year of my outside the hull transducer getting knocked loose and epoxy on top of epoxy, I am thinking about switching to an inside the hull transducer. Like to hear the pro's and con's and will I still get the sensitivity on deep structure?

That is all I ever use. The ones outside are accidents looking for a place to happen. When I put one down I take my Dremel and grind off the top layers of fiberglass to be sure I have a good place with no air pockets before I glue it down. I have no trouble seeing baitfish schools and predators in them down to 60'. I rarely fish deeper than 60.
