I just traded for an Alumnacraft 18' center console with a k90 Johnson on it. How we'll do these boats perform in the bays. Does it need a jack plate on I it?

Sure it'll work. I sold a fleet of them, really good boats.
Jack plate will be helpful, you don't need setback, I like the 4" bob's on that setup. Along with a powertech 4 blade for instant holeshots and crunching oyster shell. It's not about speed it's all about getting up and gone and packing a load.
See Steve at steves props on Fork for your prop, he'll take care of you.

Yeah, I can see going out and grinding up an oyster reef in THAT sled.
