anywhere the menus are in spanish, they are usually pretty good...and i'm partial to lupes' in stephenville in front of the ace hardware...if it's still there...

Del Norte in Godley is very good and unique too.

Del Norte.... You'll be shocked at the quality of the food for being in Godley TX. Its definitely not your run of the mill Tex Mex joint. Nice old Texas smokehouse feel to it as well. Built out of an old automotive service shop. The auto lift is still on the floor in the dining room. Depending on when you go, might be able to taste something cajun too. Like Gumbo or Redfish. Owner Chris likes to change up the specials quite regularly.

And you're right you never know what surprise the owner will be cooking up on any particular day.

Taco's Ernesto on McCart Ave. in Ft. Worth - authentic Mexican street tacos and they have a cantaloupe flavored agua fresca drink that is amazingly good

The best street tacos are in border towns. Laredo in the industrial park. Look for the junkiest 1980s conversion vans with taco wrote on em. Spent slot of time in border town and u just can't beat em. Banker hours tho cause they come across in morning and go back in evening.
The taco stand in canton isn't bad either but not border quality
