Ik right now it's mostly sheepshead, trout, and occasionally redfish season but come late May, what will be biting? Mackerel and Red Snapper? And also will the sheepshead still be biting? Thanks. I fish more freshwater so don't know a lot about saltwater fishing yet.

Depends on where you fish and what species you want to go after. Late may the trout bit will be a little more consistent as long as the water temp gets hot enough to drive the to the deep oyster reefs in the bay. Redfish bit will improve in the marsh and grass flats as well. Flounder are getting more consistent for a little while but then will spread sorta thin during the peak of summer. Can still be caught but only those that know what they are doing and fish specifically for them will catch more than a straggler. Sheepies should continue to bite on the rocks of the jetties, and as the water warms even more we'll see more and more mackeral and jacks in the surf and deeper areas off the jetties and beach.
You can use your freshwater tackle for trout, reds
Some of the offshore guys will have to talk about snapper.
