Need a good range rattler recipe! My family is having a contest and i need to hit this one outta the park! so please help! and thanks in advance!

My recipe is pretty simple but taste great. Sometimes I experiment with adding different ingredients to the cheese mixture.
Large jalapenos split down side with stem left on and deseeded jumbo gulf shrimp (I use cooked shrimp from meat deli) Monterey Jack cheese Cilantro (minced) Red bell pepper (diced)
1. Blanch jalapenos and remove the skin (leave stem attached). 2. Split down both sides to remove seeds and membrane. 3. Mix cheese, cilantro and bell pepper into a mixture. My mixture is usually 1 cup finely grated cheese, 1 T. cilantro and 1/4 c. red bell pepper. Make yours to taste. 4. Open jalapenos and stuff with shrimp and cheese mixture. Don't over stuff or it will not stay together when frying. 4. Dip in a beer batter and fry until golden brown.
Serve with a homemade ranch dressing. Chipotle ranch has a nice flavor.

I would just use the largest pickled japs you can find and stuff it the same way. I would bread it versus batter it. I like a crunchier outside. And yes....that is how they do it at Saltgrass Steakhouse. Some "Golden Dipt" breading mixed with some seasoned flour will produce a very similar results.

#1 Always use ungutted (<~word?)fresh blanched peppers(just split one side) Easy batter is very low to no sugar cornbread mix Good quality jerky,fine chopped and mix in cream cheese,let sit(refridged) for a day or more
