The only way I have ever had carp was when my Mother would pressure cook it and then make patties out of like you would do salmon. Then she would make thin patties and fry it crispy. It was actually very good.

Carp is a weed eater and a bottom feeder, the flesh has an earthy taste. Back in medieval times monks used to keep them for food. The only time I have eaten carp was braised in red wine Mike

I had an Indonesian friend gut one run a stick through it and cook it on an open fire. We ate it with a spicy sauce he had pre made for the occasion, was not terrible!
That's my only experience

Cedar Plank Carp
Filet the carp, salt and pepper both sides of the filet. Place on a cedar plank that has been soaked in water for a couple of hours Put the cedar plank with fish on it above hot coals on the bbq grill.
When the cedar plank chars completely on the bottom, scrape the fish off the plank and eat the plank.

In the 40's and 50's my father and neighbors would set out gill nets in the Blanco and Guadalupe river. They preferred the red horse carp which didn't get any bigger than about two pounds. They would scale the fish then filet them and cut the meat with a filet knife about every 3/8" all the way to the scaled skin. They would put cornmeal mixed with salt and pepper between the slits cut in the flesh so it would fry crisp so there weren't any bones to worry about. The skeleton was also fried. We might not have been rich, but I didn't know that. Was raised on that and deer meat.

Went to a well regarded "fish restaurant" in Omaha NE that served fried carp. That carp was TERRIBLE. Never went back. And I LOVE fish.

Not all carp are the same, some are fine eating if processed correctly Youtube has a few proper break down vids
Once you have the right carp, processed correctly(cut up) it can be cooked many different ways. With decent smoking skills it will easily rival the best salmon
I get 5-6lbs from my yankee neighbor in Ohio every year and its very tasty.(not fishy)
