Will soured maze work as well in the winter as it does in the summer for channels on Braunig and Calaveras?

Only if it was made last summer so it went the the heat and fermintation process. It will still be rip and ready to go. Hold your nose to load the buckets.

I have caught many big cats on the soured maize. some up to or past 20 lbs.
Trying to catch anything that swims. Commons, Buffs, whatever.... Wild Carp Club-Houston

You will catch a lot of carp and buffalo on "vomit corn" too.
