Cornmeal and salt to taste. For channels cats soak in Louisiana Hot Sauce (not Tabasco) With a little water for one hour before frying.

I use stone ground cornmeal from Kroger and some Cajun seasoning.

Though I have used them all, I too like Louisiana in the blue bag the best.

I had some of the blue bag yesterday it was coarser then the yellow bag which made it crisper .not bad at all I will have to try some of these .never heard of Panola .

Try the Jiffy corn muffin mix with the Louisiana. One bag one box. Pretty tasty.

Yellow Louisiana fish fry the best.Or you can mix the blue and yellow .with slap your mama that is real good.

LA hot sauce in a plate, lay each fillet side in it then Zataraine's or LA either one.
