We seem to cook all our sandies and hybrids the same. We try to eat healthily so we stay away from frying. Any ideas. We got two way we cook them. In the pan with a little olive oil and seasoning and baked with a little mayo and cheddar on top.

Any others???

In a pan heat 2 large cas of diced tomatoes add diced fresh jalepenos add one (thawed) bag frozen cut up okra add seasoned sand bass. Cover and simmer until fish turns white and flakes stir to break up fish serve as is or over rice

Broil in the oven about 2 minutes a side with a little butter and garlic and herb salt. After you turn on the final side, cover the filets good with parmesan cheese and cook till melted and slightly brown. Use tin foil to make clean up easy. food peep

I've always rubbed the fillets with mayo, a very very light coating to keep the fish moist. Then sprinkle breadcrumbs and any other season you like (Old Bay, chili powder etc.) then bake. It's simple and fast

Boil them until white and flakey,add everything that you would in tuna salad. Makes great sandwiches.
