A real light coating of mustard diluted with milk is pretty tasty, but too often I've seen people drench them heavily in straight mustard and roll them in cornmeal and the mustard flavor just overwhelmed the fish.

Here's something else you might want to try. Dip your fillets in Louisiana Hot Sauce before you batter them. Be sure it is not Tabasco sauce. It gives it a great flavor and is not hot. Next time you cook fish try a couple of fillets and see how you like it. Jim

YEP....French's yellow liquid Mustard or the store brand yellow liquid mustard in jar or bottle.. I get mustard and place a good amount in a large plastic zip seal bag... Place your fillets in the bag with mustard...coat them good. In different large zip seal bag--add your favorite fish fry dry product....place a few mustard coated fillets in the powder bag a few at a time and coat the good... Add to hot oil about 350--375 deg.cook a few at a time. This does work great on your fillets that are too fishy tasting for a lot of people..The mustard takes away the strong fish taste when fried..The fillets are GREAT! When you are cleaning up..just throw the bags away in trash for easy clean up.

I use Dijon mustard and Zatarin's fish fry. You do not taste mustard, but it holds batter and enhances flavor.

one cup of white vineger and a huge squirt of yellow mustard. Rinse the fillets of in the vineger/mustard and roll in La fish fry.

I think the yellow mustard out of the bottle is too thick to use. I thin it down with Louisiana hot sauce then dredge in flavored corn meal. It gives the fish a nice kick. This a great way for catfish and crappie was good also!

Mustard = great way to ruin fried fish. Get some speckled trout no need for mustard. For some of the fishier tasting fish mustard can be ok.
