I recently caught a big yellow mudcat/yellow bullhead, and it had a lot of yellow meat, and red meat. I read up that you should not eat the yellow meat as it has a lot of toxins in it? Any advice on this? I was fishing for Blue's, but this was the only catch of the day and fried catfish was the on the dinner menu that night. Seems like all I have been catching in the local fishing hole is a lot of yellow mudcats. No blues....

Bullheads are bait. Channel, blue, and flathead/yellow are all good table fair.

Usually best under one year of age. Older ones can get greasy and fat and may have became sour pusses. Best to eat cats with a good coating of bar-b-q. Don't recommend road kill, a little too oily.

Blues are far better than channels IMO.
Has a mild sweet flavor.

Channel is ok but too "muddy" for me.

Smart people have told me to release all blues over 10lbs. For the fishery and they just dont taste that great when they get older.

Flatties are the best and then blues. I throw all channels back, but that is just me. Many folks like channels, I can't get past the yellow in the meet.
