I prefer to just scale, dehead and gut them before throwing them in the skillet! laugh

that sir is a beautiful i dont know what (sunfish)......
so if ya dont wanna fry em then what ??
i learned how to fillet fish before most people knew what it was ....over 40 years ago ......
if you understand the skeletal structure on each species you never have to trim out ribs ....they stay on the skeleton
each finished fillet should look like a "mitten" off most panfish
i can burn thru em like a chain saw .....
and i never ever use an electric knife
zero bones is the best way to go .......

If you mean missing out on a great meal by not catching and eating PERCH, then Griff is unequivocally, 100% correct!

I've been cleaning them like this lately. I don't do it exactly like him, but it's close.

I fillet my bream, crappie and bass down to the tail but not cut all the way thru the skin, flip over, then cut off the skin, then trim out the ribs.

And my wife and I both love 'em cooked using Froggy's recipe! Substituted Slap-ya-momma, that my wife found at Central Market, for the Ball's Cajun Seasoning but will use Ball's next time, now that I know where to get some!

I've cleaned trout like the video Coreywms posted but never used that way on any other fish.

Scale under water with a spoon, remove the head and guts, coated with yellow cornmeal and then introduced to hot grease in a deep skillet. Only thing missing is thick cut potatoes and a cold one and footballsorry got carried away (man, I need to go bluegill fishing)

I love them. We used to catch a bunch of them, scale them, cornmeal them up and fry them until crisp and eat bones and all. Those rib cages are great like that too from crappie. Net Girl won't cook the rib cages though. She thinks that's bad for me.
