I set the timer on my digital and set it on the seat up front and move back to the console area.

I use a video camera which has a remote control.
I have a camera mount on a pole that fits in the seat pedistal socket on my rear deck
I set it to take still images, turn the display towards me, compose the picture with the Zoom button and take the snapshot while I am standing on the front deck. I know what the picture will look like before I take it.

I just use my digital camera and set the timer - I set it on the back seat annd pose on the front deck - it takes a little practice but I have over a hundred pictures that I have taken that way - anyone who looks at them would think I had some one with me taking the pictures.
