Ok I have never had hybrid 'on the half shell'. How would one prepare this?

This is the way I grill them and we like it a lot:
Brush both sides of the filet with olive oil Season with garlic pepper Preheat grill to 350 make sure to line the grate with foil after you grill reaches temp and spray foil with olive oil or cooking spray. Cook on one side for 4-5 minutes, Turn, cook on other side for 3-4 minutes or until the fish starts to flake. Brush them with melted butter after you put them on your plate.

half shell, grill skin down never turn seasoning can include just about anything but most recipes include salt butter, black pepper wet include light italian, any juice of lemon lime orange herbs include garlic, oregano, rosemary, basil, cilantro fish ready when flakes easily can do in oven do make sure you line your pan it is messy works on all species if you skip the remove the skin and rib portion when you fillet (half shell is basically split in half back bone and head removed) you can go crazy with any dry seasonings you like

My favorite hybrid recipe is to make a meal in the food processor with Club crackers and pecans. Run the clean(no red meat) filets through an egg wash then batter them with the meal and pan fry them in olive oil. The combination of the nuttiness of the batter with the clean taste of thick fresh hybrid filets is really hard to beat. A lemon/herb butter sauce drizzled over the top of the pecan encrusted filets sets it over the top. My favorite hybrid on the halfshell recipe is to coat the filet in mayonnaise and then coat with Tony Cachere's seasoning. Grill skin side down on a low heat grill about 10 minutes. Use skin as a plate and pick the meat off with a fork. Another favorite of mine is hybrid tacos with mango salsa. Coat filets in seasoning of choice(preferably mexican or cajun). Grill til just overcooked(when they are flaking apart). Put fish on tortilla with mango salsa, cilantro, and avocado. Enjoy with an ice cold diet milk. All of these recipes are great with FRESH hybrid or striper....Make you slap yo momma Dang, I have done made myself hungry. Heading to the lake to get me a fresh hybrid or stripe for supper

I forgot to mention. If you have someone in your household that isnt much of a fish eater, soak the filets in buttermilk for a few hours before using the first recipe. The non fish eater will love it.
For the more adventurous, try some fresh hybrid sashimi. It is about as good as you can get with a freshwater fish. Just slice thin and band it to a ball of sticky rice with seaweed. Serve chilled with wasabi and have at it.

We had the hybrids strips cooked in shrimp/crab boil, cooled, then used for tacos, that was very good and was great the next day as well
