Shack, several ways work.
Easy way, (not necessarily the best way) is a BIG chunk of cut bait on the bottom and be patient. 9/0-12/0 circle hook, and a short leader, or hook up high. Want the bait on or just off the bottom.
Live bait will work but with the snapper #'s so high now, there's a good chance they'll suck the bait before the grouper can get to it.

i'm hoping the night drop is deep enough the snapper wont bother us ? is there such a depth ? i know at tequila 650 ft they were no problem

Red snapper don't bite @ night, for the most part they're sleeping.
