would adding water to it defeats the purpose of preserving the meat fresh? I would think it would take out all the flavor out of the meat. any thought?

I have done the freezer bag with water, and air squeezed out for many years. Never freezer burned any fish, nor noticed any degradation in flavor/texture.

I have done the freezer bag with water, and air squeezed out for many years. Never freezer burned any fish, nor noticed any degradation in flavor/texture. +1 Many, many years Use just enough water to cover the filets and squeeze ALL the air out. It will freeze within a day, so no flavor is leeching out. Filets last for over a year. I always eat them by then, but they are still very good, so no telling how long they would last. Found a woolly mammoth up north frozen for a million years. Made good steaks!

I have been using the Glad plastic storage containers, they work well and stack real nice in the freezer.

The Foodsaver method works very well without water, which does twomthings for you. 1. Space saving in freezer. 2. Thaws out quickly when you are ready to cook. Always wanted to try one of them. How's the moisture content of the food after you thaw it out ?

I used the ziploc filled with water and freeze method for many years and my father and grandfather still do to this day. I switched to a vacume sealer. My thoughts: air causes freezer burn; the water keeps the fish longer than vacume sealers, but many disagree; vacume bags take far less room and thaw much faster; the fish tastes the same either way; vacume sealing still gives you many months if not years, but I dont know because it never lasts that long in my house. Freezing in water will improve your filets and exponentionally increase how long they last in the freezer if you are not using a vacume sealer, but will also greatly increase the thaw time.

Rinse the filets. Dry with a paper towel. Place them in a Foodsaver bag and vacuum seal. If you're going to be storing them for a long period of time, another method is to set them on a cookie sheet on wax paper. Flash freeze them, then vacuum seal.

When you vacum seal you need to open up the package to thaw this way you will keep moisture in fish.
